The text is really hard and a vivid example is a great way to clear the minds of the readers. Not only, does introducing steer 534 give us a clear example but it also strengthens his claim as a way of evidence that what he thinks is right. Pollan thinks that the industrial food chain has completely negative impacts on us, on farmers, and on animals. Introducing steer 534 allows people who disagree with him to see why they shouldn't, and to see where Pollan is coming from and how he is able to prove it. Therefore, introducing steer 534 not only gives readers a vivid example, but also helps Pollan defend his claim and makes it hard for others to disagree with him.
