I believe the benefits outweigh the risks when it comes to Local Sustainable. The benefits include that the environment is being helped and also that the animals are being treated as animals and not as machines. In the text, Pollan states that one type of farming destroyed the land, but now a new type of farming was restoring it. This obviously shoes the benefits of local sustainable farming because it's helping fix the environment after another type of farming ruined the land. Another benefit is that the animals are being treated like animals. In text it states that the people on the farm try their best not to work against the animals' natural instincts. They do this in various ways as to not make the chickens seem like egg laying, meat producing machines. One risk, however, is that the farming is seasonal and may not be available at all times. This is why the benefits outweigh the risks.
