The benefits outweigh the risks on the local sustainable food chain because they help out with your health and the environment. The text states, "Give them twenty-four hours to eat the grass and fertilize it with droppings, and then then move onto fresh ground" (162). This shows that local sustainable outweigh the risks because it cleans up and helps the environment quickly and naturally. The text also states, " These people were paying a higher price for polyface food, an in many cases driving more than am hour to come get it". People are paying much more for locally grown food but it is worth it because it taste better and overall improves your health and the environment. Paying more money is nothing when in the longshot you are getting better tasting food and improving the environment while you're at it.
